So I'm going to use this one as an Allysen's Recipes journal- because I am also a Decent Cook.
Roasted Eggplant White Pizza- Above Board!
1 lb pizza dough (just go to your local bakery, & ask for pizza dough- so much easier than making it)
1 1/2 eggplant chopped
1 1/2 vidalia onion chopped
2 cloves garlic minced
extra virgin oil oil generous drizzle
1/2 c mozzerella cheese shredded
1/4 c cheddar shredded
1/4 c pecorino romano shredded
substantial pinch herbs du provence (ie- rosemary,basil, oregano etc)
salt to taste
This pizza is done in two steps :
First preheat oven to 450 degrees (be sure to give your dough counter top time to rise- about an hour)
combine the eggplant/onion/garlic & drizzle w extra virgin olive oil to coat, you can use a foil lined bake pan for easy clean-up/storage if
making actual pizza later in the day.
roast for about 1/2 hour - or until veggies are soft/carmelized
heat oven to 400 degrees (don't worry if still quite hot from roasting veggies)
put a knickle amount of extra virgin olive oil in your hand, rub together &
stretch & pat your dough into desired shape
on baking sheet/cookie sheet. ( Best Results-Invest in a an insulated baking sheet, if you do not already have one!)
If the dough wants to 'spring back' very small again- it has not risen enough.
Make it behave!
Use olive oil hands to pat oil on top of flattened pizza dough.
top with roasted eggplant, vidalia onion,garlic
sprinkle herbs /salt
Bake 20-25 mins , or until golden brown. (Knock on crust to hear a 'hollow sound'- !)
Enjoy & serve w red zin, or another robust red wine, to famished guests.
Perhaps pair w grilled sweet sausages....
