More Soup!

I hadn't made this soup in awhile~ & really can't remember why?

It totally Rocks in a Soupy fashion!!!!!

(It's a knock off~ so shhh don't tell..........)

Venus de Milo-ish Soup

1 lb ground hamburger
1 package Lipton Onion Soup
46 oz chicken stock
1 can Delmonte Stewed tomatoes (process in Cuisanart/blender)
1/2 c peas
1/2 c corn niblets
1/2 c chopped carrots


1/2 c orzo noodles (cook separately)

Brown meat , drain
add chicken stock, & lipton (or any dry onion soup mix)
add the processed stewed tomatoes, with their juice ~
add the veggies & simmer 20 mins.

Meanwhile, cook orzo (or any other soup noodle you like) in another pan, according to directions
& then drain, add to the soup.

Serve w crusty bread!

Top w grated Pecorino-Romano if you feel extra Italian...

Tortilla Soup

It is getting nice & chilly out, & that means Soup.

I love to make roast chicken, & this is a wonderful way to use up every last tasty bit~
it's a little more exciting than the regular ole fare.




Tex- Mex Tortilla Soup

Make a stock by bringing the left-over , picked off
chicken bones to a boil , & simmering on low ...
drain
& add

BEEF bouillon (1 to 2 cubes to taste)(Knorr)

Chicken bouillon (1 cube)

2 cups of water

1/2 cup chopped onion

1/2 cup chopped green pepper

bring to boil , simmer 5 mins

add

the chopped left-over roast chicken meat

1 14 1/2 oz can of chopped tomatoes (I food-process a
can of stewed Delmonte)

1/2 cup of corn niblets

2 tbs chili powder

1 tsp cumin

1/2 tsp oregano

Pepper to taste

Fresh cilantro - snip some into there!

(you might not need any extra salt, because of the
bouillon)

Cover, let simmer on low until veggies are soft-10
mins

Break some tortilla chips into a bowl-
serve soup over the chips
& garnish on top with shredded cheddar cheese & some
avocado pieces,
if desired.

Don't try to add tortilla chips
unless you are going to eat the soup Immediately!

I'm trying to justify having a Third Blog- in addition to my Three Webpages with Song/Calender...yet I can't seem to stop myself.
Livejournal is so cool- & I like to respond to surveys.

So I'm going to use this one as an Allysen's Recipes journal- because I am also a Decent Cook.

First entry:

Roasted Eggplant White Pizza- Above Board!

1 lb pizza dough (just go to your local bakery, & ask for pizza dough- so much easier than making it)
1 1/2 eggplant  chopped
1 1/2 vidalia onion chopped
2 cloves garlic minced
extra virgin oil oil generous drizzle

1/2 c mozzerella cheese shredded
1/4 c cheddar shredded
1/4 c pecorino romano shredded
substantial pinch herbs du provence (ie- rosemary,basil, oregano etc)
salt to taste

This pizza is done in two steps :
First preheat oven to 450 degrees (be sure to give your dough counter top time to rise- about an hour)

combine the eggplant/onion/garlic & drizzle w extra virgin olive oil to coat, you can use a foil lined bake pan for easy clean-up/storage if
making actual pizza later in the day.
roast for about 1/2 hour - or until veggies are soft/carmelized

Pizza-time
heat oven to 400 degrees (don't worry if still quite hot from roasting veggies)
put a knickle amount of extra virgin olive oil in your hand, rub together &
stretch  & pat your dough into desired shape
on baking sheet/cookie sheet. ( Best Results-Invest in a an insulated baking sheet, if you do not already have one!)
If the dough wants to 'spring back' very small again- it has not risen enough.
Make it behave!
Use olive oil hands to pat oil on top of flattened pizza dough.
Sprinkle cheese(s)
top with roasted eggplant, vidalia onion,garlic
sprinkle herbs /salt

Bake 20-25 mins , or until golden brown. (Knock on crust to hear a 'hollow sound'- !)
Enjoy & serve w red zin, or another robust red wine, to famished guests.
Perhaps pair w grilled sweet sausages....
